ABOUT THE EVENT
ProCheese Awards 2021 — the first-ever national competition, where any producer of cheese can take part in, no matter the size and volume of their manufacturing process, that has obtained all the required documents. For the first time, the winner of this competition will get a chance to represent Ukraine and their products on an international arena.

What to expect

Day 1 (22 May)
Local cheese contest
The board of professional judges will choose the cheese that best corresponds to the quality characteristics in its category and will be representing Ukraine at the World Cheese Awards 2021 in Spain.

Day 2 (23 May)
Contest for Cheesemongers
The winner will be granted a guest pass for the World Cheese Awards 2021 in Spain, as well as being able to become a contestant at the first national cheese platter competition in Ukraine


CONTESTANTS WILL BE ASSESSED BY:
You are a cheese maker, therefore:
- you would like to obtain recommendations from renowned cheese experts;
- you aim to represent Ukraine with your cheese at the World Cheese Awards 2021 in Spain;
- you have all of the necessary documents;
- making cheese is the job of your dreams;
- you wish to improve the craft of your own cheese.
P.S. any cheesemaker can take part in this competition, no matter the size and volume of their production

You are a cheesemonger, therefore:
- you work as a cheese sommelier, cheese salesperson, carving master or you are simply interested in the art of creating cheese platters;
- you would like to advance in developing your skills;
- you are aware of different cheeses and their characteristics, you are able to properly cut and present them;
- you dream of attending the World Cheese Awards 2021 in Spain, and find yourself in a real cheese universe.

- contribute to the creation of cheese history in Ukraine;
- participate in the cheese fair, raise brand recognition and expand the audience of its followers;
- communicate with like-minded individuals;
- take part in a private gala-dinner with partners, other contestants and judges;

ProCheese is a team of experts created by Ardis Group — a structured group of companies in Ukraine with more that 20 years of experience in import and sales of cheese, experts in production of fresh cheese.
ProCheese — a community that will change your perceptions about cheese. Because it is truly greater than just food, it is an art in itself!

FAQ
All cheeses will be assembled on the tables depending on their category. The branding from the cheeses will be taken off beforehand, in order for the grading to be fair. The assessment will be conducted according to international practices of evaluation as well as by preparation obtained by judges at the WCA.
According to the results of the evaluation, there will be a finalist from each category. These cheeses will be collectively places onto the finalist table, from which the judges will be choosing one, which will gain the most positive feedback correlating with its organoleptic properties. The winner will be representing Ukraine at the World Cheese Awards 2021 in Spain.
However, we would like to highlight that all cheeses from the table of finalists are able tot are part in the World Cheese Awards, but at their own expense. In return, the ProCheese Community is open to aid in consulting and technical support with the documentation process. The grand winner will be granted full access and financial support when attending the event.
According to the statistics and dynamics of ill-recorded citizens, we are not expecting drastic quarantine measures to be implemented. However, if there will be some unforeseen changes, we are ready to host the event in an online format with only judges and cheese.
The winner will definitely be chosen and rewarded! Therefore the event shall go on!
We will provide a written guarantee, that the winner will be able to go to Spain next year.

Documents
What documents do I have to provide for my product to take part in the competition or cheese market?
For small cheese producers:
- TU for products — developed by a technologist, approved by the head, registered in the state register of SE “UKRMETRTESTSTANDART”.
- Manufacturer’s declaration — written in any form with all the necessary information about the product and certified with a seal and signature of the manufacturer.
For large enterprises:
- Operating permit for facilities – can be obtained from the main department of the State Food and Consumer Service in the region.
- HACCP certificate (DSTU ISO 22000: 2019) – obtained at the certificate office.
- TU for products – developed by a technologist, approved by the head, registered in the state register of SE “UKRMETRTESTSTANDART”.
- Manufacturer’s declaration – is written in any form with all the necessary information about the product and certified with a seal and signature of the manufacturer.
- Expert opinion — can be obtained from an accredited laboratory/district/region.
Important: all market participants are required to have sanitary records.
Details of selection
1) Apply for participation through our site (the button is located below)
2) Fill in the form. Our manager will then contact you to discuss further details.
3) All those who pass the selection according to the forms get a 2-day intensive course in Kyiv, on how to create a cheese plateau from Oksana Chernova and invited experts.
4) At the end of this course, experts will select 10 cheesemonger finalists who will take part in the ProCheese Awards, and learn the theme for the cheese plateau competition, in order to have time to prepare accessories for the composition of their future design.

Everything you need for completing your work, you will receive during the competition: cheeses, knives, and aprons.
